Cooking tips for Organic Grass-Fed and Grass-Finished Beef


Saint John’s organic grass-finished beef is pure and nutritious with a robust flavor. It is really good for you. 

Grass-finished beef cooks differently than grain-finished beef. In particular, overcooking will decrease tenderness and decrease beneficial nutrients.

We have learned to cook this beef slowly, and to watch not to overcook


Steaks

  • Put the meat on the grill or stove at a high heat for a brief time to seal in the juices, then turn the heat down.

  • Take the meat off the grill or stove a little before you think it is ready, because the heat in the meat will keep it cooking.

  • Plan to cook steaks 1/2 or 2/3 the time of conventional grain fed beef, then check to see if it is done to your liking. You can always cook it more.


Roasts

  • Cook slowly in a crock-pot.

  • Sprinkle with salt and pepper and add 1 cup of water.

  • Try the low setting for 8-10 hours for a 4 pound bone-in roast.

  • You will know the roast is done when it flakes easily with a fork.

  • Season and enjoy with vegetables, or consider making enchiladas or pulled beef.

  • If you have time, brown the roast on all sides before putting it in the pot, and add onions, beef broth or marsala.

  • Like steaks, put the meat on the grill or stove at a high heat for a brief time to seal in the juices, then turn the heat down.

  • Take the meat off a little before you think it is ready.
